I searched but couldn't find the answer. What is the purpose of the holes in an engraving vice?

The holes are to take pegs of various materials depending what item is being engraved, this form of work holding is to enable irregular shaped items to be held firmly. Also a good quality engraving vice has a lot of mass helping the engraver the engraver to work without locking its rotational movement.

Pins or pegs. They are about 1/8(some of larger diameter) inch diameter by 1/2 inch long to one inch and they fit into rows of holes and allow you for instance to hold something circular in shape such as a coin to engrave and something oblong such as the lock plate of a side lock ejector. When you tighten the jaws the pins move against the object to hold it in place.

Look at this link and you will see the aforementioned holes. https://grs.com/product/standard-block/

In this video you can see the pins/pegs

It's vise, not vice. A vise is an object, a vice is bad character trait.

May God bless America and those who defend her.
