You two guys are dead on re. BBQ N.C. style. Pig slow cooked for 9 hours over chunks of wood coals on a grill, pulled & chopped with a spreakling of vinegar laced with red pepper, and a touch of sage not only cuts the grease but adds to the flavor. Gotta go kill a pig. ken
