I have shot swans in ND.
They cannot be shot in MI. Though local idiots have shot three on my marsh this year! What nincompoops! 6ft wingspans, all white, and they still get shot!
They are mild flavored, similar to beef. We roast them as an addition to our Thanksgiving feast.
Like any large bird, they should be cooked slowly with moisture.
A cranberry-rosehip sauce is a delightful accompaniment.
They bear absolutely NO RESEMBLANCE IN FLAVOR to grass fed dark geese.

A buddy of mine shot an illegal swan on a Spring snow goose hunt in Sask. a few years ago. The mate circled around and around making the 'saddest' call of anything I ever heard. I added swan to my "Spirit Bird" list of things I won't shoot, along with Loon, Owls, Ravens, Cranes and those longtailed black and white birds that light on your downed ducks and eat the breast out of them...Geo
