I am saving for a custom double stalking rifle for hunting in North America (mainly for deer and hogs). My main hunting area in mountains and thick woods in the South.
I am looking for a rimmed cartridge that will suit my purposes. I will be reloading so getting pre-made ammo is not problem but, I want brass that is reasonably available. The first thing I think of is 30-40krag, 7x57R, or 307win. What are your thoughts?

I'd be inclined toward the 9.3x 74R cartridge. In many European countries it is considered "the" wild Boar cartridge. It has better stopping power than the cartridges you were considering. At the same time it is not overly powerful for Deer. Since you'll be reloading, you can download it for small deer or keep it as is for Northern species. It also has better trajectory characteristics than many of the older rimmed cartridges.

Darn hard to top the 45-70 for deer and hogs, but then again I'm alittle bias as I have a number of them in various action strenghts from the 1884 Springfield to a Ruger No. 1. Even shoot a Rem. SxS (Biakal) that once sighted in for 90 yds. makes a great light double rifle.

The 30-40 Krag would be a good choice, many different bullets weights and makes to choose from.

i have a couple 45-70 sxs drs. i hunt with and really find them great calibers but also reload and find all the componants readally available and also reasonably priced. also have a sxs dr. in 30-40 krag i use when i want to reach out a bit further. both are great cartriges.

Depends on whether money or power are considerations or not.

If money is a consideration then picking one of the small or medium bores that are common in Europe like 7x57r, 7x65r, 8x57r, or 9.3x74r opens up a large number of relative inexpensive European double rifles. If power is a consideration, 9.3x74r, 45-70 etc. are excellent choices.

I've used 9.3x74r and also 7x65r on a fair number of game. I'd say the 7x65r would handle most anything in the lower 48 USA. The 9.3 makes a lot of sense if you are hunting heavier game like elk, bears, moose, etc. If its mostly whitetails and hogs the 7x65r will work well.

45-70 for a larger framed gun (457 bore)
38-55 or 375 Winchester for a medium framed gun (375 bore)
307 Winchester for a small framed gun (308 bore)
These American cartridges would fill the need
