With tongue firmly in cheek, I think it [extractor toe] must refer to the Winchester model 24 & more specifically the part that fits under the rim of the cartridge. Certainly, it is not a term in wide use. Where & in what context did you find it?
On the term 'ejection system': it is a reference to a spring powered kinematic that throws a spent cartridge clear of the chamber when the gun is opened.
An extractor merely lifts a cartridge away from the chamber [fired or un-fired] irrespective of its design. It never ejects.
