It sounds like you guys pretty much have things"in hand".I never had that much trouble, even when fitting a right hand EL to the top barrel of an o/u combo gun.That was when I had to remove one screw from one of the adjusting pads.I just don't understand why the "fixed" pad at tha rear were filed at all.Maybe whoever fit them didn't realize the other side moved.

I wouldn't worry much about a bullet denting the barrel, it would impact at such an angle that it wouldn't hurt.I wouldn't think you would have trouble with headspace, it is not that crtical and you can still use the adjustment screw. If you have to move the screw, you can still cut the seat square, or file the bottom at the new location, like the other owner did. It is prefered to cut the seat, this helps relocate the EL if it is removed.
