How do you measure LOP with a movable trigger ?

Measure the same as any other. Describe it as "LOP to forward/center/rear position."
The question highlights the lack of value in such a measurement, except as a comparison between stocks of nearly identical grip configurations on guns with nearly identical actions.
But if you have a professional fitter determine your LOP it's usually valued at $2-300.

I agree with Mike Campbell. For purposes of measurement if one must be taken, set the trigger at the midpoint of travel and measure from that. Also note the longest and shortest pull that it can be adjusted to.
While other posters are correct that the length of pull is not a complete measure and there is more to it than trigger positioning in relation to the butt of the gun. It is still a measure that people reference.
The length of the stock affects the comfort in mounting. I prefer as long a stock as possible that can be comfortably mounted.
The length more importantly affects the positioning of the eye in relation to where the gun is pointing. Ultimately fit is about the gun and eyes being synchronized naturally without conscious effort. Length is just one component of that fit.
