While I like older Amercan shotguns, I don't believe there is anything "immoral" about parting-out an old shotgun, or old car.

In my "older" neighborhood, builders are buying homes 50 to 80 years old, leveling them, and constructing larger brand new homes with modern plumbing, larger bathrooms and kitchens, better insulation, etc. Other than the fact it probably raises my property tax valuation, I see nothing wrong with this approach.

Perhaps immoral is the wrong word.
