I'm thinking of re-barreling a classic rifle by one of the great pre-WWII custom makers. Who would you get a new barrel from today?

I would not hesitate to recommend Douglas barrels. If you needed competition level accuracy, the extra cost of cut rifling could be justified, but in a rifle intended for hunting, Douglas barrels will shoot better than you can hold and cost a good deal less. Their delivery time is excellent, and they are rock- solid, honest folks to deal with.

Another thought, if it is a 1903 and you want an original contour, etc., give Criterion a look. Pre threaded, short headspace, and simple install. Used to be a subsidiary of Krieger but now a,separate company. Good barrels.

If the barrel has makers marks you want to preserve, consider rebore/rechamber job.

This particular rifle was a .30-06, and its original barrel is pretty neglected and shot out. I have lots of '06s in good shape, and I thought I might rebarrel it in a different caliber. It's a pity to lose the original barrel, but that barrel is in crappy condition.

I guess I'd need a quality gunsmith to install that new barrel, too.

You might consider reboring the original barrel to 338-06 or 35-06 (35 Whelen)
http://35caliber.com/

Cost is about $250 for 4 groove barrel and the original barrel is
still in place and the gun usable.
No need to modify the inletting and other issues
