We've done this for years with pork baby back ribs. You can sear them under the broiler if it's easier, best part is you can fiddle with other things while it's on cruise control in the oven. Beef ribs can be a treat, a butcher can cut 'em thin across the bone. With a decent marinade and a smok'in hot grill, things are more interesting around the bone.
