Man, that looks good, Bob. Do you use a wood pellet grill/smoker, or the more traditional type? Most folks around here are using Traegars or Rec Tecs. The Rec Tec is home based about 50 miles from me, so they are really catching on around here.

I converted a Turbo 1000 to smoking duty. Real wood only, mostly Hickory. Chips far right, lowest flame, about 200 degree kettle temp. Since this photo, I began to separate the "Point" from the "Flat" and cook the Flat using an oven recipe. It's too thin compared to the Point, and doesn't stand up to the cook time.

Does anybody remember when we were "ten feet tall and bullet proof" and thought the VC/NVA couldn't get us? The "spring breakers" think the same thing about the virus. I hope learning their lesson doesn't cost them as much as it cost us. Mike Mekong Delta University, class of 1970

Chances are they would, but may the spring breakers never have to step up to the plate, in large part because of those who came before them. The one thing I still wonder about, with so many before, why does this 'pandemic' break new ground. Next time, the first questions might not be about health, but motivations. I don't wish anyone ill, but there are so many other conditions, past and ongoing, where it's ok to look the other way.

brand spanking new virus....with zero immunity in world population. and, to some degree, i agree with those who question why another flu-like virus is such a big deal. i think the answer is two pronged; first the lack of immunity, and second (and maybe having greater impact) is related to logistics. my step daughter is a PA, who works as a hospitalist under the head of infection control locally. they are both extremely concerned about this situation, have told me they expect chaos. i suspect we are about to see the shortcomings of our health care delivery system revealed in graphic detail. hope i'm wrong....

graybeard, The difference here is that the rate of growth for this new critter is amazingly fast. 10 to 60 times faster than the average flu virus. Add to that, it is quite severe and has a very high mortality rate for some groups of people, and you have something that is in another league.
You are right about the those shortcomings issues, but we didn't need an epidemic to see that.
