PBS is not my usual haunt since it's become essentially the equivalent of an elderly fat matron berating people. But. . this program from SW Virginia was really fun and contained not only a great recipe for wild rice but some real tips for dressing Doves. I know is pretty puerile but consider the audience. Well Gene, I have to thank you for this. It is always good to have new thoughts on preparing and cooking birds, game and so forth. The video is beautifully done in a beautiful setting. Looks like some lovely wines. Very civilized as well as "thoroughly pleasant" as you observed .
And it is most thoroughly pleasant that we have a post for something interesting and related to shooting and increases readership of this BBS.

Thanks for posting! That was enjoyable to watch and I'm sure that was a very delicious meal. However, she could have just used a cheap cut of beef and it would have been delicious with all those ingredients and that cooking method.
I think doves are good enough that all you need to do is pluck them and fry them, with the legs still attached. The legs are the best part. Serve them with biscuits and gravy, mashed potatoes, and purple hull peas, and you will need about an hour to pick through them and get every bite of meat off the legs. Gotta eat the biscuits and stuff during the first part of the meal before they get cold, then take your time with the legs.

I strongly believe that shows like this are important in building the public image of hunting. The average non-hunter is not going to even turn on a show titled "Killing my first Grizzly" or anything like it. The frequent watchers of this type of show will watch it and maybe take away a different opinion of the whole subject due to seeing people like themselves participating and enjoying it. This show I thought was very well done and really put a positive, realistic spin on the subject.
There are more shows like this around the whole public TV system. There are also magazines that are influential and interesting. One of my favorites is Garden & Gun to which I have subscribed almost from it's beginning. It is hard to pin down but very interesting. It is a high quality publication devoted to all things Southern. In it you find articles on Appalachian trout fishing, high end shotguns, opera, quail hunting, Muscle Shoals blues music, custom instrument makers, deer hunting, Hell's Bay flats skiffs, vacations at the beach, bourbon, Nashville, fine restaurants, the Kentucky Derby,handmade bamboo fly rod makers, trends in food and agriculture, decoys, pets, books, artists, wood carvers, duck call makers and some of the best humor around. They also hold yearly events such as a shooting weekend and a fly fishing weekend for women, Secret Dinner events, food festivals, plantation quail hunts and events at the Kentucky Derby and race day at Keeneland here in Lexington. These are partnered with specialty food and spirits vendors who provide and discuss their products.
I read the magazine and have attended several of the events locally. Because everthing is presented as a positive and there are no bashing or derogatory political pieces, I have seen the effect this approach can have. People who are readers and attendees seem to be more respectful of a broad range of opinions they had not been introduced before. I think existence of shows like this and publications like this have a much greater influence than narrow focused hobby platforms on the improvement of tolerance on the issues. A gourmet cooking show that focuses on hunting and game harvest will in the long run have a much more positive impact on the average voter than anything ever published by the NRA.

Yes but, AGS, Garden and Gun isn't going to go to court for you and fight for your Second Amendment rights. I like the rag too, but it's apples and oranges when you compare it to the NRA. Both are important, in different ways, JMHO.

I am a life member of the NRA and a huge supporter. Nothing negative about their work, but my point is that the average American soccer mom or little league dad has little to no contact with the NRA written and film message, and likely never will have. Positively slanted works on the platforms that are part of the world of the middle and liberal factions will have a much better chance of altering opinion long term. I think the whole conservative culture has been too hard core focused in their work and needs to expand into the mainstream in meaningful ways. A great example could be NRA Country, but it is primarily only seen in American Riflman, which is preaching to the choir. The hard core is needed to protect the second amendment, but across the electorate, the message will not get out there unless there is movement into more neutral and liberal venues.

When I hear a "chef" discuss brining dove overnight to remove a "gamey" taste I have the same sensation of someone dragging fingernails across a blackboard. They may rattle off a bunch of spices in French, toss around "organic' (then also use lard) but they don't know squat about wild bird preparation. The video is nice, the rice sounds nice, but give me a break. Steve Bodio once wrote " I get tired of hearing how dark- fleshed birds âtaste like liverâ- good LIVER doesnât taste like liver when it is cooked rare, turned over quickly in hot bacon fat and butter. My disgusted French- born gourmand friend Guy de la Valdene, after he read an American recipe for woodcock that involved two cans of cream of mushroom soup and an hour and a half in the oven, wrote (in Making Game in 1990): âAs this recipe negates the whole reason for killing the birds in the first place, why not take it a step further and poach the Woodcock overnight in equal parts of catsup, pabulum, and Pepto- Bismol.â I need to go. I see some kids on my lawn...Gil
