I like to age deer also, but don't have temperature control in my barn and they usually freeze, stopping the whole process. Better to take quarters to house basement of house and hang from the floor joists.

It's been something of a temperature roller-coaster here so I'm breaking this animal down today.

I skinned it Saturday (when it was almost 65-degrees outside) to start the process and then it cooled off in the evening and all day yesterday so I let it hang another day. It's been 5-days since it was taken and it still smells great. We test deer (& elk) here for chronic wasting so my efforts today won't mean anything until those text results come back. If I had to guess, this one will be fine and taste darn good.

Birds are so much easier, but venison (in nearly all of it's forms) is pretty wonderful stuff. A small price to pay to have it in your diet.

Here they have to have the head of the deer to test for CWD at the top of the spinal cord.
