But the JY(whatever) is nowhere close to the Sütterlin K or Sütterlin Großbuchstabe K

Both RCBS and Redding can make a custom sizing die, unless you choose to have the 7X57 chamber trued and polished.
The Sharpie case paint up plan works.

I have a custom Mauser in 30-06 Ackley Improved that was a bit tight. I finally got a neck-size only die
and the rifle works smoothly now. But finding out EXACTLY where the cases were sticking being too tight,
greatly helped in solving the problem.Tighter re-sizing die fixed the problem, along with insuring the chamber was
squeaky clean.

As far I know RCBS is completely out of the custom die game.

You may be right, as they have reduced the number of exotic or African Double gun caliber dies.
Huntington Die Specialties also at one time also located in Oroville, CA has virtually reduced hours or is now
closed.

My 450 Alaskan/450 Fuller both form dies and reloading dies have reached the unobtanium level.
