Can someone tell me the type of wood finish Ithaca used on a 1949 4E single barrel trap gun? I am assuming that it may have been a nitrocellulose lacquer. It doesn't look like an oil/varnish finish.

Probably a lacquer. I know they used it on Knicks in the 60s. Duco was the product they used on production M-37s so probably on the SBT also. I know they used it in many many coats on the later Knicks. This from my observations--I have no factory data on it.
