Definitely low tech, but also very slow. Instead of a two-week soak with a potato, I get the same results with a two-day soak in white vinegar, $.99/gallon. Just did a cast iron bench vise that had been out in the weather for a few years and most of the rust washed off with a garden hose. The vinegar is reuseable.

Adds color and character, makes it resemble red wine vinegar.

Also smells better than rotting potatoes.
