Agree. Start with some 400 grit wet-or-dry to remove the gold, then polish with successive use of 600, 800, then 1000 grit. Don't worry about removing too much metal with these grits.

If it's good steel underneath the gold, a fire blue would look good and wear to a nice patina. Not sure if a plain field grade Citori is worth all the trouble though.
